New Tech Highlight: The Reinvention of Marra Forni’s Brick Oven

In today’s industry, brick ovens are a coveted item among Italian restaurateurs across the country. Their ability to hold heat makes them extremely economical and efficient when cooking. Not to mention, food-lovers crave the amazing flavor that comes from a wood-fired brick oven. Over the years, not much has changed when it comes to these brick beauties. That is, until the minds at Marra Forni found a way to improve them.

At last year’s National Restaurant Association show in Chicago, Marra Forni unveiled two brand new innovations: the Marra Forni Electric Brick Oven with Open Mouth and the Marra Forni Rotator Deck Brick Oven with Double Mouth Opening. Both are already changing the game when it comes to what a brick oven can do.

Italian brick ovens are well-known for the high heat they can produce. While a consumer oven only reaches temperatures of around 500 degrees Fahrenheit, and a commercial convection oven can reach up to 600 degrees, a typical brick oven can reach temperatures of around 800 degrees. Marra Forni has exceeded all expectations with their new Electric Brick Oven, which reaches over 1000 degrees and can bake a pizza in 45 seconds. The new electric models are even more energy efficient than their woodburning counter parts, decreasing your restaurant’s utility costs.

In addition to the Electric Brick Oven that was debuted at the NRA show, Marra Forni introduced the Rotator Deck Brick Oven with Double Mouth Opening. Unlike most brick ovens, this model has two separate openings, allowing chefs more flexibility in the kitchen. These ovens can bake pizzas, which can be inserted and removed from both sides, in just 90 seconds. Thanks to the forced air burners and air screen, heat remains in the oven instead of escaping through the mouths, thus maintaining a standard oven temperature.
