New Tech highlight: Alto-Shaam’s Ovens Do It All

Alto Shaam has long lead the pack with their innovative ovens since 1950. From ovens that cook overnight to heated display cases, Alto-Shaam is always coming up with new ideas that keep the restaurant industry moving forward. This year at the National Restaurant Association Show in Chicago, Alto-Shaam continued to live up to their name with their newly debuted Alto-Shaam Vector™ F Series Multi-Cook Oven.

The idea of a multi-cook oven is not completely new. Last year, Alto Shaam introduced the electric H Series along with their patented Structured Air Technology™.  These multi-cook ovens deliver high-velocity, focused heat for faster and more uniform cooking than one would find in traditional ovens. This allows chefs to simultaneously cook up to four items, at individualized temperatures, fan speeds and cooking times. These ovens also come with the ability to cook unlike items at the same time without having to rotate pans, change temperature, or worry about cross contamination of odor or flavors. In addition, chefs can also open the oven doors to move and remove items on one shelf while the oven continues to cook.

The largest development between the H series and the F series is the added size. While they both function using the same Structured Air Technology, the F series can fit full sized sheet or hotel pans. The combined chamber capacity of the F series also allows for taller items to be cooked within the same space. The F Series also has a patent pending that allows the user to combine two cooking chambers into one. This would allow chefs the ability to cook larger items without interrupting the airflow for the other chambers.
